Onion50 g
Bell pepper50 g
Garlic5 g
Canned crushed tomatoes200 g
Canned black beans100 g
Canned corn50 g
Chili powder5 g
Cumin3 g
Salt2 g
Black pepper1 g
Egg2 pcs
Fresh cilantro5 g

Instructions

Preheat oven to 200°C (400°F) if baking, or prepare a small oven-safe skillet for stovetop simmering.

Heat olive oil in a small oven-safe skillet or oven dish over medium heat.

Add chopped onion and bell pepper and cook until softened, about 4-5 minutes.

Add minced garlic and cook for 1 minute more until fragrant.

Stir in crushed tomatoes, black beans, corn, chili powder, cumin, salt, and pepper. Bring to a simmer.

Simmer gently for 5 minutes to allow flavors to meld.

Create two wells in the sauce and carefully crack an egg into each well.

If baking: Transfer skillet/dish to the preheated oven and bake for 8-12 minutes, or until egg whites are set but yolks are still runny.

If simmering: Cover the skillet and simmer gently over low heat for 8-12 minutes, or until egg whites are set.

Carefully remove from heat. Garnish with fresh chopped cilantro before serving.
