Instructions

Finely dice the onion. Wash and roughly chop the spinach.

In a small saucepan, combine oats and milk. Bring to a simmer over medium heat and cook for 5-7 minutes, stirring occasionally, until creamy. Season with a pinch of salt.

While oats are cooking, heat olive oil in a non-stick pan over medium heat. Add diced onion and sauté for 2-3 minutes until softened.

Add spinach to the pan and cook until wilted, about 1-2 minutes.

Whisk eggs with a pinch of salt and pepper. Pour into the pan with the vegetables. Scramble until cooked through, about 2-3 minutes.

Serve the savory oats topped with the scrambled eggs and spinach mixture. Add extra salt and pepper to taste if desired.
