Savory Tofu Scramble with Summer Vegetables and Whole Wheat Toast

Zucchini58 g
Cherry Tomatoes38 g
Nutritional Yeast14 g
Turmeric Powder2 g

Whole Wheat Bread48 g

Instructions

Step 1: Dice the onion, bell pepper, and zucchini. Halve the cherry tomatoes. Crumble the firm tofu into small pieces.

Step 2: Heat olive oil in a non-stick pan over medium heat. Add diced onion, bell pepper, and zucchini and sauté for 3-4 minutes until slightly softened.

Step 3: Add the crumbled tofu to the pan. Sprinkle with nutritional yeast, turmeric powder, black salt, and black pepper. Stir well to combine and cook for 5-6 minutes, stirring occasionally, until tofu is heated through and slightly browned.

Step 4: Stir in the halved cherry tomatoes and cook for another 1-2 minutes. While the scramble finishes, toast the whole wheat bread.

Step 5: Serve the savory tofu scramble immediately with the toasted whole wheat bread on the side.
