Tofu300 g
Spinach100 g
Mushroom100 g
Nutritional Yeast15 g
Olive Oil15 ml
Whole Wheat Tortilla45 g
Salsa50 g
Turmeric2 g
Salt2 g
Black Pepper2 g

Instructions

Step 1: Drain and press the tofu to remove excess water. Crumble it into a bowl.

Step 2: Heat olive oil in a non-stick pan over medium heat. Add chopped mushrooms and sauté for 3-4 minutes until softened.

Step 3: Add the crumbled tofu, turmeric, nutritional yeast, salt, and black pepper to the pan. Cook, stirring occasionally, for 3-4 minutes until the tofu is heated through and slightly browned.

Step 4: Stir in the fresh spinach and cook until wilted, about 1-2 minutes.

Step 5: Warm the whole wheat tortilla in a dry pan or microwave for 30 seconds. Fill the tortilla with the tofu scramble and top with salsa. Serve immediately.
