Savory Tofu Scramble with Spinach & Cherry Tomatoes

Firm Tofu200 g
Nutritional Yeast2 tbsp
Spinach100 g
Cherry Tomatoes100 g
Red Onion25 g
Garlic3 g
Olive Oil11.3 ml
Whole Grain Bread45 g
Turmeric0.3 tsp
Black Salt0.3 tsp
Black Pepper0.1 tsp

Instructions

Step 1: Press the firm tofu to remove excess water. Crumble it into a bowl.

Step 2: In a small bowl, whisk together nutritional yeast, turmeric, black salt, and black pepper. Add to the crumbled tofu and mix well.

Step 3: Finely dice the red onion and mince the garlic. Halve the cherry tomatoes and roughly chop the spinach.

Step 4: Heat olive oil in a non-stick pan over medium heat. Add diced red onion and sauté for 2-3 minutes until softened.

Step 5: Add minced garlic and sauté for another 30 seconds until fragrant.

Step 6: Add the seasoned tofu mixture to the pan. Cook for 4-5 minutes, stirring occasionally, until heated through and slightly browned.

Step 7: Stir in the chopped spinach and cherry tomatoes. Cook for 1-2 minutes until spinach wilts.

Step 8: Serve immediately with whole grain bread on the side.
