Instructions

Dice the sweet potato into small cubes. Mince the onion and garlic. Roughly chop the kale.

Heat the olive oil in a non-stick pan over medium heat. Add the diced sweet potato and sauté for 3-4 minutes until slightly tender.

Add the minced onion and garlic to the pan and cook for another 2 minutes until fragrant.

Crumble the firm tofu directly into the pan. Add the chopped kale, nutritional yeast, turmeric, salt, and black pepper. Sauté for 2-3 minutes, stirring gently, until the kale wilts and the tofu is heated through.
