- Cooked Rice1.3 cup
- Rice Vinegar0.8 tbsp
- Medium Onion0.3 cup diced
- Garlic1 clove minced

- Olive Oil1.8 tbsp
- Salt0.3 tsp
- Black Pepper0.1 tsp
- Frozen Mixed Vegetables1.5 cup
- Dairy-Free Soy Sauce1.5 tbsp
Instructions

Press excess water from the firm tofu. Cut tofu into 1/2-inch cubes.

Heat 1.5 tbsp of olive oil in a large skillet or wok over medium-high heat. Add tofu cubes and cook, stirring occasionally, until golden brown and slightly crispy on all sides, about 8-10 minutes.
