Ingredients (Serves 2)

Firm Tofu (extra firm, pressed)14 oz
Cooked Rice1.3 cup
Frozen Mixed Vegetables1.5 cup
Medium Onion0.3 cup diced
Garlic1 clove minced
Dairy-Free Soy Sauce1.5 tbsp
Rice Vinegar0.8 tbsp
Sesame Oil0.8 tbsp
Olive Oil1.8 tbsp
Salt0.3 tsp
Black Pepper0.1 tsp

Instructions

Press excess water from the firm tofu. Cut tofu into 1/2-inch cubes.

Heat 1.5 tbsp of olive oil in a large skillet or wok over medium-high heat. Add tofu cubes and cook, stirring occasionally, until golden brown and slightly crispy on all sides, about 8-10 minutes.

Add the diced onion and minced garlic to the skillet and cook until fragrant, about 1-2 minutes.

Stir in the frozen mixed vegetables and cook until heated through and tender-crisp, about 5-7 minutes.

In a small bowl, whisk together the dairy-free soy sauce, rice vinegar, sesame oil, salt, and black pepper.

Add the cooked rice to the skillet with the tofu and vegetables. Pour the sauce over the mixture.

Stir gently to combine everything and heat through, about 1-2 minutes.
