Instructions

Wash and peel the parsnip, carrot, and potato. Dice them into small, uniform cubes (about 1 cm). (3 minutes)

Dice the onion. Slice the sausage into rounds or dice it. (3 minutes)

Heat the olive oil in a large skillet over medium-high heat. Add the diced parsnip, carrot, and potato. Cook, stirring occasionally, for 8 minutes until they start to soften and brown. (8 minutes)

Add the diced onion, sausage, salt, pepper, and thyme to the skillet. Continue to cook, stirring frequently, for another 5 minutes, or until the sausage is cooked through and the vegetables are tender and slightly crispy. (5 minutes)
