- Water200 ml
Instructions

Step 1: Bring a small pot of water to a gentle simmer for the poached eggs. Add a splash of vinegar if desired.

Step 2: In a separate saucepan, combine oats and 400ml water. Bring to a boil, then reduce heat to low and simmer for 5-7 minutes, stirring occasionally, until oats are cooked and creamy.

Step 3: While oats are cooking, crack eggs individually into small bowls. Gently slide each egg into the simmering water. Poach for 3-4 minutes for soft yolks.

Step 4: During the last 2 minutes of oat cooking, stir in the fresh spinach until wilted. Remove from heat and stir in the cottage cheese and olive oil. Season with salt and black pepper to taste.
