Instructions

In a small saucepan, combine oats and water. Bring to a simmer over medium heat and cook for 5-7 minutes, stirring occasionally, until oats are creamy. Stir in egg whites and cottage cheese until fully incorporated and oats are cooked through. Season with a pinch of salt and pepper.

Meanwhile, heat olive oil in a non-stick skillet over medium heat. Add spinach and sauté for 2-3 minutes until wilted. Remove spinach and set aside.

In the same skillet, fry or scramble the eggs to your preference (about 2-3 minutes for a fried egg).

Divide the savory oats between two bowls. Top each serving with sautéed spinach and a fried egg. Garnish with fresh chives, a pinch of salt, and pepper.
