Savory Oatmeal with Fried Egg & Spring Greens

Ingredients (Serves 2)

Oats45 g
Egg2 unit
Spinach50 g
Spring Onion7.5 g
Olive Oil2.5 ml
Salt1 pinch
Black Pepper1 pinch

Instructions

In a small saucepan, combine oats and water. Bring to a boil, then reduce heat and simmer for 5-7 minutes, stirring occasionally, until water is absorbed and oats are creamy. Season with a pinch of salt.

While oats cook, heat olive oil in a non-stick pan over medium heat. Add chopped spring onion and sauté for 1 minute.

Add spinach (or wild garlic) to the pan and cook until wilted, about 2-3 minutes. Remove from pan and set aside.

In the same pan, crack the eggs and fry to your desired doneness (e.g., sunny-side up for 2-3 minutes).

Divide the cooked oatmeal between two bowls. Top with the sautéed greens and a fried egg. Season with black pepper.
