Instructions

Dice the chicken breast into 1 cm cubes, potatoes into 0.5 cm cubes, and finely chop the onion. (5 minutes)

Heat the olive oil in a non-stick skillet over medium-high heat. Add the diced chicken and cook for 3 minutes, stirring occasionally, until lightly browned.

Add the diced potatoes and chopped onion to the skillet. Season with salt and pepper. Cook for another 3 minutes, stirring frequently, until potatoes are tender-crisp and chicken is cooked through. If needed, add a splash of water to prevent sticking.

Remove from heat and stir in fresh chopped parsley. Serve immediately.
