Savory Buckwheat with Ground Turkey and Bell Pepper

Buckwheat Groats30 g
Ground Turkey175 g
Bell Pepper75 g
Onion37.5 g
Olive Oil4 ml
Salt1 g
Black Pepper0.5 g
Paprika1 g

Instructions

Rinse buckwheat groats thoroughly. In a small saucepan, combine buckwheat with 240ml (1 cup) water. Bring to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes, or until water is absorbed.

While buckwheat cooks, heat olive oil in a non-stick pan over medium-high heat.

Add ground turkey to the pan, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.

Add diced onion and bell pepper to the pan with the turkey. Sauté for 3-5 minutes until vegetables are softened.

Stir in salt, black pepper, and paprika. Cook for another minute.

Once buckwheat is cooked, fluff with a fork and add it to the pan with the turkey and vegetables. Stir to combine.

Serve immediately while hot.
