Savory Beef and Spinach Rice Bowl

Ingredients (Serves 2)

Lean ground beef (90%)340 g
Dry brown rice110 g
Spinach100 g
Onion100 g
Bell pepper100 g
Garlic10 g
Low-sodium soy sauce (dairy-free)30 ml
Sesame oil10 ml
Olive oil15 ml
Salt2 g
Black pepper1 g

Instructions

If using pre-cooked brown rice, skip this step. Otherwise, cook brown rice according to package directions.

Heat olive oil and sesame oil in a large pan or wok over medium-high heat.

Add minced onion and cook until softened, about 3-4 minutes.

Add ground beef and cook, breaking it up with a spoon, until browned. Drain excess fat if necessary.

Stir in minced garlic and chopped bell pepper, cook for another 3-4 minutes until bell pepper is slightly tender.

Add spinach and cook until wilted, about 1-2 minutes.

Pour in soy sauce and stir to combine.

Divide cooked brown rice between two bowls.

Spoon the beef and vegetable mixture over the rice.
