Quick Vietnamese Chicken & Glass Noodle Stir-fry

Ingredients (Serves 1)

Chicken Breast100 g
Glass Noodle40 g
Bell Pepper50 g
Carrot30 g
Spring Onion5 g
Garlic5 g
Fish Sauce10 ml
Soy Sauce10 ml
Cooking Oil5 ml
Black Pepper1 pinch

Instructions

Soak glass noodles in hot water for 5 minutes until softened, then drain and set aside.

Thinly slice the bell pepper and carrot. Mince the garlic and chop the spring onion.

Heat cooking oil in a non-stick pan over medium-high heat. Add minced garlic and cook for 30 seconds until fragrant.

Add ground chicken and stir-fry, breaking it up, until cooked through (about 3-4 minutes).

Add sliced bell pepper and carrot to the pan, stir-fry for 2 minutes until slightly tender-crisp.

Add the drained glass noodles, fish sauce, and soy sauce to the pan. Toss everything together for 1-2 minutes until well combined and heated through.

Stir in chopped spring onion and a pinch of black pepper. Serve immediately.
