Unflavored Protein Powder20 g

Chili Powder3 g
Cumin2 g
Whole Egg50 g
Milk80 ml
Olive Oil10 ml
Corn (canned or frozen)50 g
Onion10 g
Bell Pepper (any color)10 g

Instructions

In a medium bowl, whisk together the plain flour, cornmeal, protein powder, baking powder, salt, chili powder, and cumin.

In a separate bowl, whisk the whole egg, milk, and oil.

Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the canned or frozen corn, finely chopped onion, and finely chopped bell pepper.

Heat a non-stick pan over medium heat. Pour approximately 60-70ml of batter per fritter onto the hot pan.

Cook for 3-4 minutes per side, or until golden brown and cooked through.
