Quick High-Protein Huevos Rancheros
A speedy, protein-packed take on the classic Mexican breakfast. Features fried eggs and egg whites over warm tortillas and beans, topped with a fresh, quick salsa.
Ingredients
- canned crushed tomatoes100 g
- red onion, finely chopped15 g
- shredded cheese10 g
- salt1 g
- whole egg50 g
- egg whites150 g
- corn tortilla40 g
- canned black beans, rinsed and drained120 g
- cilantro, chopped5 g
- lime juice5 ml
Instructions

Finely chop the red onion and cilantro. In a small bowl, combine the crushed tomatoes, chopped onion, cilantro, lime juice, and salt. Stir and set aside to make the quick salsa.

Rinse and drain the black beans. Heat them gently in a small saucepan over medium heat until warmed through, about 5 minutes.

While beans heat, warm the corn tortillas in a dry skillet over medium heat for 30-60 seconds per side, or microwave briefly until pliable.

In a separate non-stick skillet, heat a tiny amount of oil or cooking spray if needed. Pour in the egg whites and cook until mostly set, about 2-3 minutes. Crack the whole egg into the skillet alongside the egg whites and fry sunny-side up or over easy for another 3-4 minutes, or until cooked to your preference.

Assemble: Place the warm tortillas on a plate. Top with the heated black beans. Carefully slide the fried egg and egg whites on top of the beans. Spoon the quick salsa over the eggs. Sprinkle with shredded cheese.
