Quick Chicken, Egg, and Zucchini Scramble with Corn Tortilla

Chicken breast80 g
Egg50 g
Zucchini50 g
Bell pepper30 g
Onion20 g
Black beans50 g
Olive oil5 ml
Chili powder2 g
Cumin1 g
Salt1 g
Black pepper0.5 g
Corn tortilla30 g
Cilantro2 g

Instructions

If chicken breast is not pre-cooked, cook it now. Chop or shred the cooked chicken.

Finely chop the zucchini, bell pepper, and onion.

Heat the olive oil in a non-stick pan over medium heat.

Add the chopped onion, bell pepper, and zucchini and cook for 3-4 minutes until slightly softened.

Add the chopped chicken breast, black beans, chili powder, cumin, salt, and black pepper. Stir and cook for another 2 minutes to heat through.

While the vegetables and chicken are heating, whisk the egg in a small bowl.

Push the chicken and vegetable mixture to one side of the pan. Pour the whisked egg into the empty side of the pan.

Scramble the egg until just cooked through, then mix it into the chicken and vegetable mixture.

Warm the corn tortilla in a separate dry pan or microwave for 30 seconds.

Serve the scramble immediately with the warm corn tortilla. Garnish with fresh chopped cilantro if desired.
