Quick Chicken and Spinach Fried Rice

Ingredients (Serves 2)

cooked shredded chicken180 g
large eggs3 pcs
cooked rice150 g
fresh spinach80 g
onion40 g
garlic8 g
olive oil5 ml
dairy-free soy sauce10 ml
salt2 g
black pepper1 g

Instructions

Finely chop the onion and mince the garlic.

Heat olive oil in a large pan or wok over medium-high heat.

Add onion and garlic, cook until fragrant, about 1-2 minutes.

Push onion and garlic to one side, crack eggs into the other side. Scramble the eggs until cooked through, breaking them into small pieces.

Add cooked shredded chicken and cooked rice to the pan. Stir everything together.

Pour in the dairy-free soy sauce. Stir well to coat everything.

Add the fresh spinach and cook just until wilted, about 1-2 minutes.

Season with salt and black pepper to taste.
