Egg white30 g
Black bean80 g
Corn tortilla75 g
Cheddar cheese15 g
Onion20 g
Bell pepper20 g
Salsa30 g
Salt1 g
Black pepper0.5 g
Oil3 ml

Instructions

Finely dice the onion and bell pepper.

Heat a small amount of oil in a non-stick pan over medium heat. Add the diced onion and bell pepper and sauté for 3-4 minutes until softened.

While vegetables cook, whisk the eggs and egg white in a bowl with salt and pepper.

Add the whisked eggs to the pan with the vegetables. Stir gently to scramble the eggs until cooked through, about 3-5 minutes.

Warm the corn tortillas in a dry pan or microwave until pliable.

Spoon the scrambled eggs onto the warm tortillas. Top with black beans, shredded cheddar cheese, and salsa.
