Quick Black Bean and Chicken Quesadilla

Ingredients (Serves 1)

Whole wheat tortilla40 g
Black beans70 g
Cooked chicken breast20 g
Cheddar cheese15 g
Olive oil1 ml
Chili powder1 g
Cumin0.5 g
Salt0.5 g
Onion10 g
Tomato20 g
Cilantro2 g
Lime juice3 ml

Instructions

In a small bowl, mash the black beans slightly with a fork. Stir in the shredded chicken, chili powder, cumin, and salt.

Lay the tortilla flat. Spread the bean and chicken mixture over half of the tortilla. Sprinkle the grated cheese evenly over the mixture.

Fold the other half of the tortilla over the filling to create a half-moon shape.

Heat the olive oil in a small non-stick pan over medium heat.

Carefully place the quesadilla in the pan. Cook for 4-5 minutes per side, or until golden brown and the cheese is melted.

While the quesadilla cooks, combine the chopped onion, diced tomato, cilantro, and lime juice in a small bowl for a quick salsa.

Remove the quesadilla from the pan, slice it in half, and serve immediately with the fresh salsa.
