- Spinach50 g
- Onion50 g
- Garlic5 g

- Sweet Potato100 g
Instructions

Finely chop the onion and mince the garlic (2 minutes). Peel and dice the sweet potato into small, 1 cm cubes (2 minutes). Wash and roughly chop the spinach (1 minute).

Heat the olive oil in a large non-stick skillet over medium-high heat (1 minute). Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 3 minutes.

Add the lean ground beef to the skillet, breaking it up with a spoon. Cook for 5 minutes, stirring occasionally, until browned and cooked through.

Stir in the diced sweet potato. Add a splash of water (about 15ml) to help it steam and cook faster. Cover the skillet and cook for 5 minutes, stirring occasionally, until the sweet potato is tender-crisp.
