Quick Bean and Cheese Quesadilla with Fried Egg and Salsa

Ingredients (Serves 1)

Corn tortilla25 g
Cheddar cheese30 g
Black beans80 g
Egg50 g
Salsa50 g
Olive oil5 ml
Onion20 g
Bell pepper20 g
Salt1 g
Chili powder2 g

Instructions

Finely chop the onion and bell pepper.

Heat a small amount of olive oil in a pan over medium heat. Add the chopped onion and bell pepper and sauté until softened, about 3-5 minutes.

In a small bowl, lightly mash the black beans with a fork.

Lay one corn tortilla flat. Sprinkle half the cheese over one half of the tortilla. Top with the mashed beans and sautéed vegetables. Sprinkle the remaining cheese over the filling.

Fold the tortilla in half.

Cook the quesadilla in the same pan (add a tiny bit more oil if needed) over medium heat for 3-4 minutes per side, or until golden brown and the cheese is melted.

While the quesadilla cooks, heat a separate small pan with the remaining olive oil over medium heat. Crack the egg into the pan and fry it to your desired doneness.

Season the fried egg with salt and a pinch of chili powder.

Slide the quesadilla onto a plate, top with the fried egg, and serve immediately with salsa on the side.
