Ingredients (Serves 1)

Moong Dal120 g
Spinach50 g
Onion30 g
Green Chili5 g
Ginger5 g
Cumin Powder2 g
Turmeric Powder1 g
Salt2 g
Vegetable Oil20 ml

Instructions

Pre-soak moong dal overnight or for at least 4 hours. Drain thoroughly.

In a blender, combine the soaked moong dal, spinach, roughly chopped onion, green chili, and ginger with about 50ml water to form a smooth, thick batter.

Stir in cumin powder, turmeric powder, and salt into the batter.

Heat 10ml of vegetable oil in a non-stick pan over medium heat for 1 minute.

Pour a ladleful of batter onto the hot pan and spread it evenly to form a thin pancake (cheela).

Cook for 3-4 minutes until the edges firm up and the top starts to look dry. Drizzle remaining 10ml of oil around the edges.

Flip the cheela and cook for another 3-4 minutes until golden brown and cooked through.

Repeat for remaining batter (makes 2 cheelas). Serve hot.
