Mexican Spiced Sweet Potato and Ground Beef Bowl

Ingredients (Serves 1)

Sweet Potato100 g
Ground Beef150 g
Onion30 g
Garlic5 g
Tomato50 g
Black Beans50 g
Oil5 ml
Cumin2 g
Chili Powder2 g
Paprika1 g
Salt1 g
Pepper0.5 g

Instructions

Wash the sweet potato and dice it into approximately 1 cm cubes (takes about 3 minutes).

Finely chop the onion and garlic (takes about 3 minutes).

Dice the tomato (takes about 2 minutes).

Measure out the spices and oil (takes about 2 minutes). Total Prep Time: 10 minutes.

Heat 3 ml of oil in a pan over medium-high heat. Add the sweet potato cubes and pan-fry, stirring occasionally, until tender and slightly browned (takes about 8 minutes). Remove sweet potato from the pan and set aside.

Add the remaining 2 ml of oil to the same pan. Add the ground beef and cook, breaking it up with a spoon, until browned (takes about 5 minutes). Drain excess fat if necessary.

Add the chopped onion and garlic to the pan with the beef and cook until softened (takes about 2 minutes).

Stir in the cumin, chili powder, and paprika and cook for 30 seconds until fragrant.

Return the cooked sweet potato to the pan. Add the black beans and diced tomato. Stir to combine and heat through (takes about 2 minutes). Season with salt and pepper to taste. Total Cook Time: 15 minutes.

Serve the mixture in a bowl.
