Instructions

Finely chop the onion (2 min). Dice the pepper and tomato (3 min).

Heat the oil in a non-stick pan over medium heat (1 min). Add the chopped onion and pepper and sauté until softened, about 4 minutes.

Stir in the diced tomato, cumin, chili powder, salt, and pepper. Cook for another 2 minutes until tomatoes soften slightly.

While vegetables are cooking, whisk the eggs in a bowl (1 min).

Pour the whisked eggs into the pan with the vegetables. Stir gently and scramble until cooked through, about 4 minutes.
