Tortilla60 g
Eggs110 g
Black Beans100 g
Cheese30 g
Onion20 g
Pepper20 g
Oil5 ml

Salsa30 g

Instructions

Finely dice the onion and pepper (5 minutes).

Heat oil in a non-stick pan over medium heat (1 minute). Add diced onion and pepper and sauté until softened, about 5 minutes.

While vegetables cook, whisk the eggs in a bowl with salt and pepper (1 minute).

Push the sautéed vegetables to one side of the pan. Pour the whisked eggs into the other side and scramble until cooked through, about 3 minutes.

Warm the black beans in a small pot or microwave (2 minutes).

Warm the tortilla slightly in a dry pan or microwave (1 minute).

Grate the cheese (2 minutes).

Lay the warm tortilla flat. Spoon the scrambled eggs, sautéed vegetables, warm black beans, and grated cheese onto the center (1 minute).

Fold in the sides of the tortilla, then tightly roll it up from the bottom to form a burrito (1 minute).

Serve immediately with a side of salsa.
