Ingredients (Serves 1)

Ground beef100 g
Olive oil5 ml
Chili powder3 g
Cumin2 g
Onion powder1 g
Garlic powder1 g
Salt1 g
Corn tortilla40 g
Egg50 g
Onion20 g
Tomato30 g
Cilantro2 g
Lime juice5 ml
Cheddar cheese15 g

Instructions

Heat a small pan over medium heat. Add a small amount of olive oil.

Add the ground beef and break it up with a spoon. Cook until browned.

Drain off any excess fat.

Stir in the chili powder, cumin, onion powder, garlic powder, and salt. Cook for 1 minute until fragrant.

While the beef cooks, finely chop the onion and tomato for the salsa.

In a small bowl, combine the chopped onion and tomato with fresh cilantro and a squeeze of lime juice. Season with salt to taste.

Heat the corn tortilla in a dry pan or briefly microwave until warm and pliable.

In the pan used for beef, add a touch more olive oil if needed and fry the egg to your preference (sunny-side up or over easy works well).

Place the seasoned ground beef onto the warm tortilla.

Spoon the fresh salsa over the egg and beef.
