Turmeric Powder0.5 tsp
Cumin Powder0.5 tsp
Coriander Powder0.5 tsp
Garam Masala0.3 tsp

Instructions

Finely chop the onion, bell pepper, green chili, ginger, and garlic.

Crumble the firm tofu into small pieces.

Heat the oil in a non-stick pan over medium heat. Add chopped onion, ginger, garlic, and green chili. Sauté for 3-4 minutes until the onion softens.

Add chopped tomato and bell pepper. Cook for 2-3 minutes until slightly tender.

Stir in turmeric powder, cumin powder, coriander powder, garam masala, and salt. Cook for 1 minute until fragrant.

Add the crumbled tofu and cooked green lentils to the pan. Mix well, ensuring the spices coat everything evenly. Cook for 3-4 minutes, stirring occasionally.

Stir in the fresh spinach until it wilts (about 1 minute).
