High-Protein Scrambled Tofu & Egg Bhurji with Whole Wheat Roti

Ingredients (Serves 1)

Egg120 g
Firm Tofu200 g
Whole Wheat Flour50 g
Onion50 g
Tomato70 g
Bell Pepper70 g
Ginger-Garlic Paste10 g
Cumin Powder1 g
Coriander Powder2 g
Turmeric Powder1 g
Garam Masala1 g
Oil2 ml
Cilantro5 g
Salt2 g

Instructions

Step 1: For the roti, combine whole wheat flour with a pinch of salt and enough water to form a soft dough. Knead for 2 minutes, cover, and let rest.

Step 2: Dice the onion, tomato, and bell pepper. Mince the green chili (if using). Crumble the firm tofu.

Step 3: Heat oil in a non-stick pan over medium heat. Add diced onion and sauté for 3 minutes until translucent.

Step 4: Add ginger-garlic paste and green chili (if using), and sauté for 1 minute until fragrant.

Step 5: Stir in diced tomato and all powdered spices (cumin, coriander, turmeric, garam masala, salt). Cook for 2 minutes, mashing the tomatoes slightly.

Step 6: Add crumbled tofu and scrambled eggs to the pan. Mix well and cook for 4 minutes, stirring occasionally, until the eggs are set and combined with the bhurji mixture.

Step 7: While the bhurji cooks, roll out the dough into a thin roti. Cook on a hot griddle for 30 seconds per side, until lightly browned and puffed.

Step 8: Garnish the bhurji with fresh cilantro and serve hot with the whole wheat roti.
