High-Protein Scrambled Eggs with Spinach and Smoked Trout

Eggs250 g
Spinach100 g
Smoked Trout60 g
Olive Oil8 ml
Salt1 g
Pepper0.5 g

Instructions

Wash 100 g of spinach and roughly chop if leaves are large. Flake 60 g of smoked trout.

In a bowl, whisk 250 g of eggs with 1 g of salt and 0.5 g of pepper for 2 minutes until light and frothy.

Heat 8 ml of olive oil in a non-stick pan over medium heat for 1 minute.

Add the spinach to the pan and cook for 2-3 minutes until wilted.

Pour the whisked eggs into the pan with the spinach. Stir gently and continuously with a spatula for 5-7 minutes until the eggs are cooked through but still moist.

Gently fold in the flaked smoked trout during the last 1 minute of cooking.

Serve immediately.
