Whole egg50 g
Cooked chicken breast50 g
Red onion50 g
Bell pepper50 g
Spinach50 g
Rolled oats30 g
Raspberries30 g
Olive oil3 g

Black pepper0.5 g

Instructions

Whisk egg whites and the whole egg together in a bowl with salt and pepper.

Dice the cooked chicken breast, red onion, and bell pepper. Roughly chop the spinach.

Heat olive oil in a non-stick pan over medium heat.

Add diced onion and bell pepper and sauté for 3-4 minutes until slightly softened.

Add spinach and cooked chicken, cooking for another 1-2 minutes until spinach is wilted.

Pour in the egg mixture. Cook, stirring gently, until the eggs are set but still moist.
