Cottage Cheese200 g
Spinach100 g
Whole Grain Bread2 slice

Black Pepper1 pinch

Instructions

Step 1: In a bowl, whisk eggs with a pinch of salt and pepper. Set aside.

Step 2: Heat olive oil in a non-stick pan over medium heat. Add spinach and cook for 1-2 minutes until wilted.

Step 3: Pour in the whisked eggs. As they begin to set, gently push the cooked portions towards the center, allowing the uncooked egg to flow underneath.

Step 4: Once eggs are mostly set but still slightly moist (about 2-3 minutes), stir in the cottage cheese. Cook for another 1 minute until heated through.

Step 5: Toast the whole grain bread. Serve the scrambled eggs immediately with the toast.
