Cottage Cheese120 g
Spinach30 g
Whole Wheat Bread60 g
Tomato90 g
Olive Oil2.5 ml
Salt1 pinch
Black Pepper1 pinch

Instructions

Dice the tomato and chop the spinach. Set aside.

In a bowl, whisk together eggs, cottage cheese, salt, and pepper.

Heat olive oil in a non-stick pan over medium heat (1 minute). Add spinach and sauté for 1-2 minutes until wilted.

Pour in the egg mixture and scramble, stirring gently until cooked through but still moist, about 3-4 minutes.

While eggs cook, toast the whole wheat bread (3-4 minutes).
