High-Protein Savory Millet Porridge with Spinach and Seeds

Millet50 g
Unsweetened plant milk (lactose-free)200 ml
Water100 ml
Nutritional yeast8 g
Fresh spinach50 g
Pumpkin seeds5 g
Sunflower seeds5 g
Olive oil5 ml
Salt1 g
Black pepper0.5 g

Instructions

Rinse the millet under cold water.

In a saucepan, combine the rinsed millet, plant milk, and water. Bring to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes, or until the millet is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.

While the millet cooks, heat olive oil in a small pan over medium heat. Add the spinach and cook for 1-2 minutes until wilted. Season with a pinch of salt.

Once the millet is cooked, stir in the nutritional yeast, salt, and pepper. Add the wilted spinach and stir to combine.

Divide the porridge into two bowls. Top each serving with pumpkin and sunflower seeds.
