High-Protein Plant-Based Pancakes with Berries

Ingredients (Serves 2)

Oat flour30 g
Plant-based protein powder35 g
Plant-based milk75 ml
Baking powder2.5 g
Berries50 g
Almonds10 g
Maple syrup5 ml
Olive oil2.5 ml

Instructions

In a bowl, combine 60g oat flour, 70g plant-based protein powder, and 5g baking powder. Whisk briefly to combine. (1 minute)

Gradually add 150ml plant-based milk to the dry ingredients, whisking until a smooth batter forms. Do not overmix. (1 minute)

Heat 5ml olive oil in a non-stick pan over medium heat. Pour roughly 60ml of batter per pancake onto the hot pan. Cook for 2-3 minutes per side, or until golden brown and cooked through. Repeat with remaining batter. (6 minutes)

While pancakes cook, wash 100g berries and roughly chop 20g almonds. (2 minutes)

Serve the pancakes immediately, topped with berries, almonds, and a drizzle of 10ml maple syrup. (1 minute)
