Instructions

Preheat your oven's broiler (or set oven to 200°C). Slice the mushrooms (80 g) and leek (50 g). Dice the smoked chicken (50 g). (Prep time: 5 minutes)

Heat the olive oil (5 ml) in a small, oven-safe non-stick pan over medium heat. Add the sliced leek and cook for 3 minutes until softened.

Add the sliced mushrooms to the pan and cook for another 4 minutes until they release their moisture and start to brown.

Stir in the diced smoked chicken and cook for 1 minute to heat through.

While the vegetables cook, whisk the eggs (200 g) in a bowl with salt (1 g) and pepper (0.5 g). Roughly chop the fresh parsley (2 g). (Prep time: 3 minutes)

Pour the whisked eggs over the ingredients in the pan, ensuring even distribution. Cook on the stovetop for 2 minutes until the edges start to set.

Sprinkle the chopped parsley over the top. Transfer the pan to the preheated oven or under the broiler. Cook for 5 minutes, or until the frittata is set in the center and the top is lightly golden.
