Egg50 g
Ham100 g
Spinach60 g

Oats40 g
Milk200 ml
Salt1 pinch

Instructions

For the oats: In a small saucepan, combine the oats and milk. Bring to a simmer over medium heat and cook for 5-7 minutes, stirring occasionally, until creamy. Season with a pinch of salt if desired.

For the scramble: While oats are cooking, dice the ham. Wash and roughly chop the spinach.

In a non-stick pan, heat the olive oil over medium heat. Add the diced ham and cook for 2-3 minutes until lightly browned.

Whisk the egg whites and whole egg together with salt and pepper. Add the spinach to the pan with the ham and cook for 1 minute until wilted.

Pour the egg mixture into the pan. Scramble gently until cooked through but still moist.
