Egg White10 large
Ground Turkey200 g
Spinach100 g
Bell Pepper100 g
Feta Cheese30 g
Whole Wheat Pita Bread2.5 pieces
Olive Oil5 ml
Dried Oregano2 g
Salt2 g
Black Pepper1 g

Instructions

Dice the bell pepper into small pieces. Crumble the feta cheese.

Heat a large non-stick skillet over medium heat and add olive oil. Add ground turkey and cook, breaking it up with a spoon, until browned (about 5-7 minutes).

Add diced bell pepper to the skillet and cook for 3-4 minutes until slightly softened. Stir in spinach until wilted.

In a separate bowl, whisk egg whites with salt, pepper, and dried oregano.

Pour egg whites over the turkey and vegetable mixture in the skillet. Cook until the edges set, then gently fold the omelette or scramble until cooked through (about 3-5 minutes). Stir in crumbled feta cheese.

Warm the whole wheat pita bread in a separate dry pan or toaster. Serve the omelette/scramble immediately with the warm pita.
