Rye Bread50 g
Spinach50 g
Olive Oil2 ml
Chives1 tsp
Salt0.3 tsp
Black Pepper0.1 tsp

Instructions

Whisk eggs in a bowl with a pinch of salt and pepper. Finely chop the chives.

Heat olive oil in a non-stick pan over medium heat. Add spinach and sauté until wilted, about 1-2 minutes.

Pour in the whisked eggs. As eggs begin to set, gently push them from the edges towards the center. When mostly set but still moist, stir in the cottage cheese and chopped chives.

Continue cooking for another minute until heated through. Toast the rye bread.
