Egg2 large
Egg White180 ml
Cottage Cheese226 g
Spinach100 g
Cherry Tomato100 g
Onion30 g
Olive Oil5 ml
Whole Wheat Bread2 slice

Instructions

Step 1: Dice the onion and halve the cherry tomatoes. Wash and roughly chop the spinach.

Step 2: Heat olive oil in a non-stick pan over medium heat. Add onion and sauté for 2 minutes until softened.

Step 3: Add spinach and cherry tomatoes to the pan. Cook for 1-2 minutes until spinach wilts.

Step 4: In a bowl, whisk eggs and egg whites. Stir in cottage cheese.

Step 5: Pour the egg mixture into the pan with the vegetables. Scramble gently for 3-4 minutes until cooked through.

Step 6: Toast the whole wheat bread. Serve the scramble immediately with the toast.
