Instructions

Core and dice the apple into small pieces. In a small saucepan, combine diced apple with 2 tablespoons of water and cinnamon. Simmer over medium-low heat for 5-7 minutes, stirring occasionally, until soft. Mash lightly with a fork to create a chunky compote.

While the apple simmers, in a bowl, whisk together cottage cheese, egg, milk, whole wheat flour, baking powder, and a pinch of salt until just combined. Do not overmix; a few lumps are fine.

Heat a non-stick pan over medium heat and lightly coat with olive oil. Pour spoonfuls of the batter to form small pancakes.
