Cottage Cheese200 g
Egg1 large
Whole Wheat Flour20 g
Vanilla Protein Powder10 g
Baking Powder2 g
Vanilla Extract1 ml
Peach1 medium
Maple Syrup5 ml
Olive Oil5 ml

Instructions

In a bowl, combine cottage cheese, egg, whole wheat flour, vanilla protein powder, baking powder, and vanilla extract. Mix until just combined.

Heat olive oil in a non-stick pan over medium heat.

Pour half of the batter into the pan to form one large pancake (or two smaller ones). Cook for 3 minutes per side, or until golden brown and cooked through.

While pancakes cook, wash and slice the peach.

Serve the pancakes topped with sliced peach and a drizzle of maple syrup.
