Liquid Egg Whites0.3 cup
Bell Pepper3 oz
Onion1 oz
Spinach1.5 cup
Olive Oil1 tsp
Whole Wheat Bread2 slice
Salt0.3 tsp
Black Pepper0.1 tsp

Instructions

Dice the chicken breast, bell pepper, and onion.

Heat olive oil in a non-stick skillet over medium-high heat. Add diced chicken and cook for 4-5 minutes until browned.

Add diced bell pepper and onion to the skillet. Sauté for 3-4 minutes until softened.

While vegetables cook, whisk eggs and liquid egg whites in a small bowl with salt and pepper.

Add spinach to the skillet and cook until wilted, about 1-2 minutes.
