Whole Wheat Flour50 g
Onion60 g
Tomato80 g
Green Chili5 g
Ginger-Garlic Paste10 g
Cumin Seeds1 g
Turmeric Powder1 g
Coriander Powder2 g
Garam Masala1 g
Salt2 g
Cilantro5 g
Ghee10 g
Water30 ml

Instructions

Finely chop the onion, tomato, green chili, and mince the ginger and garlic if not using paste. Mince the chicken breast if not pre-minced.

For the roti: In a bowl, knead the whole wheat flour with water and a pinch of salt to form a soft, pliable dough. Set aside.

Heat ghee in a pan over medium-high heat (1 minute). Add cumin seeds and let them splutter (30 seconds).

Add chopped onion, green chili, and ginger-garlic paste. Sauté until the onion is translucent and fragrant (2 minutes).

Stir in chopped tomatoes and cook until they soften and the oil begins to separate (2 minutes).

Add turmeric powder, coriander powder, garam masala, and salt. Cook for 1 minute, stirring constantly.

Add the minced chicken to the pan. Cook, breaking up any lumps with a spoon, until the chicken is browned and cooked through (4 minutes). Garnish with fresh cilantro.

While the kheema cooks, divide the roti dough into two small balls. Roll out each ball into a thin circle (concurrent with kheema cooking).

Heat a griddle or non-stick pan over medium-high heat. Cook each roti for about 30-60 seconds per side until lightly browned and puffed (concurrent with kheema cooking, total 1-2 minutes per roti).
