High-Protein Chicken and Vegetable Hash with Fried Eggs

lean ground chicken220 g
potato230 g
onion75 g
bell pepper75 g
large egg2 pcs
olive oil8 ml
garlic powder3 g
dried thyme2 g
salt2 g
black pepper1 g
dairy-free butter alternative5 g

Instructions

Peel the potatoes and cut them into small cubes (about 1 cm). Finely chop the onion and bell pepper.

Heat 8 ml of olive oil in a large non-stick skillet over medium-high heat.

Add the potato cubes and cook for 10-12 minutes, stirring occasionally, until golden brown and tender.

Add the chopped onion and bell pepper to the skillet. Cook for another 5-7 minutes until softened.

Add the ground chicken to the skillet with the vegetables. Break up the chicken with a spoon and cook until browned and cooked through.

Season the hash with garlic powder, dried thyme, salt, and black pepper to taste. Stir to combine.

While the hash finishes cooking, heat a separate small non-stick skillet over medium heat.

Add a small amount of dairy-free butter alternative or oil if needed. Crack the eggs into the skillet and fry to your desired doneness (sunny-side up, over-easy, etc.).

Divide the hash between two plates. Top each serving with a fried egg.
