lean ground chicken125 g
potato100 g
onion37.5 g
bell pepper37.5 g
large eggs50 g
olive oil5 ml
garlic powder1 g
dried thyme0.5 g
salt1 g
black pepper0.5 g

Instructions

Dice the potato into 1 cm cubes. Finely chop the onion and bell pepper.

Heat the olive oil in a large, oven-safe skillet over medium-high heat.

Add the diced potato and cook for 8-10 minutes, stirring occasionally, until lightly browned and starting to soften.

Add the ground chicken, onion, and bell pepper to the skillet. Break up the chicken with a spoon.

Season with garlic powder, dried thyme, salt, and black pepper. Cook, stirring, until the chicken is browned and the vegetables are softened, about 8-10 minutes.

Create two wells in the hash mixture. Crack an egg into each well.

Cover the skillet and cook for 4-6 minutes, or until the egg whites are set and the yolks are cooked to your desired consistency.
