bell pepper45 g

chili powder5 g

black pepper1 g
fresh cilantro5 g

Instructions

Wash and dice the potato into small cubes (about 1 cm). Dice the onion and bell pepper.

Heat 5ml of olive oil in a large non-stick pan or skillet over medium-high heat.

Add the potato and cook for 8-10 minutes, stirring occasionally, until starting to soften and brown.

Add the diced onion and bell pepper to the pan. Cook for another 5-7 minutes until softened.

Add the minced garlic, cumin, chili powder, salt, and black pepper. Stir and cook for 1 minute until fragrant.

Add the lean ground chicken to the pan. Break it up with a spoon and cook until browned and cooked through, about 5-7 minutes.

Push the chicken and vegetables to one side of the pan. Add the remaining 4.1ml of olive oil to the empty side.

Crack the eggs into the oiled side. Scramble the eggs, stirring gently until cooked through.

Once the eggs are cooked, mix them with the chicken and vegetable hash.

Taste and adjust seasoning if needed. Serve hot, garnished with fresh cilantro if desired.
