Ingredients (Serves 2)

Cooked chicken breast100 g
Large eggs2 pcs
Cooked white rice100 g
Onion25 g
Bell pepper (any color)25 g
Garlic (minced)5 g
Fresh ginger (grated)5 g
Olive oil8 ml
Soy sauce (dairy-free)10 ml
Sesame oil3 ml
Salt1 g
Black pepper (freshly ground)0.5 g

Instructions

Heat olive oil in a large pan or wok over medium-high heat.

Add diced onion, bell pepper, garlic, and ginger. Cook for 3-4 minutes until softened and fragrant.

Push vegetables to one side of the pan. Add the eggs to the other side and scramble until cooked through. Break them up and mix with the vegetables.

Add the cooked chicken breast and cooked rice to the pan. Stir to combine.

Pour in the soy sauce and sesame oil. Season with salt and black pepper to taste.

Stir-fry for 3-5 minutes, breaking up any clumps of rice, until everything is heated through and well combined.
