Whole Wheat Flour30 g
Pea Protein Powder30 g
Baking Powder4 g
Cinnamon2 g
Apple100 g
Almond Milk100 ml
Eggs1 unit
Olive Oil2.5 ml
Maple Syrup5 ml

Instructions

In a large bowl, combine 60g whole wheat flour, 60g pea protein powder, 8g baking powder, and 4g cinnamon. Whisk well to combine. (2 minutes)

Grate 200g apple and set aside. (2 minutes)

In a separate bowl, whisk together 200ml almond milk and 2 large eggs. (1 minute)

Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the grated apple. Do not overmix; a few lumps are fine. (2 minutes)

Heat a non-stick pan over medium heat and lightly coat with 5ml olive oil. (1 minute)

Pour about 60ml of batter per pancake onto the hot pan. Cook for 2-3 minutes per side, or until golden brown and cooked through. Repeat with remaining batter. (12 minutes)

Serve immediately with a drizzle of 10ml maple syrup (optional). (1 minute)
